Shirataki Rice Stuffing

Since I am gluten free (for health reasons) I cannot have the traditional bread stuffing with lots of sage and thyme that I grew up with. In my Thanksgiving dinner, I use rice stuffing instead. I have been playing around with shirataki rice as a replacement for regular rice. It is mostly starch, almost no carbs, almost no calories. This works out really well in the Shirataki Rice Stuffing.

I have included this recipe in my Low-Carb Gluten-Free Midwest Thanksgiving meal plan.  This is a meal plan for a complete Thanksgiving dinner including portion sizes, shopping lists, make ahead schedule, and adjustments for dairy, tree nut, and egg allergies, vegetarians, and further carb adjustments to take it into the keto zone.
