I am Geri Winters and cooking Thanksgiving dinner for everyone has gotten to be a real challenge.

If it was just the kids complaining about food preferences - "But Mom, I don't like green beans."

I would be a lot less sympathetic. "You can eat what is in front of you or not. I'm not making anything else."

But my family is on various diets for health reasons. It has to be gluten-free for the celiac, low-carb for the diabetic, and vegetarian for the person who has trouble digesting meat. Eating the wrong food will literally make someone sick.

Thanksgiving is Hard

A couple of years ago I was at my sister's house for Thanksgiving. She knows that eating gluten makes me sick, but she did not really think about it.

All I could eat was the turkey (no gravy), green salad, celery, and carrot sticks. I had an apple for dessert.

Everything else had gluten in the form of flour - the gravy, green bean casserole, bread stuffing, dinner rolls, and pies.

Since there was not much I could eat, I did not have to worry much about eating too much!

There was plenty of food - I did not starve. But seeing and smelling all that yummy food in front of me that I used to eat, and now I could not - well it was a sad day I have to say.

I could have eaten it anyway and suffered for it over the next several days. That was not something I wanted for my holiday either.

Accommodating Different Diets was Driving me Crazy

That experience made me vow to not do that to my dinner guests!

So when I was making Thanksgiving dinner I made some vegetarian dishes and some gluten-free dishes and some low-carb dishes.

But then I spent all dinner telling people what they could or could not eat based on their diet. And people left feeling unsatisfied because there were foods that looked and smelled good, but they could not eat them.

I had to come up with a way to satisfy everyone at once and not drive myself crazy.

  • Is it low-fat? - No. I could not get the yummy taste I wanted with low-carb and low-fat. Since low-carb was required for health reasons, the meal overall remains high in fat. I include macro-nutrient counts for each recipe, so you can eat more of the lower fat dishes and just have a taste of the high-fat dishes if you choose to reduce the fat as well.
  • Are there any peanuts? - No.
  • Are there any tree nuts? - Yes in 3 of the dishes. For the shirataki rice stuffing, you can substitute mushrooms for the pecans. Leave out the walnuts in the Waldorf Salad. The Apple crumble is made with almond flour and should be avoided by anyone with a tree nut allergy.
  • Are there any eggs? - Yes. The dip and Waldorf salad include mayonnaise (which is made from eggs). You can substitute egg-free mayo (search for vegan mayo). Also deviled eggs, quiche, pumpkin pie, and keto dinner rolls all include eggs so those dishes should be avoided by people with egg allergies.
  • Is it dairy free? - No. The dip is made with cheese and so is the quiche, so these should be avoided by people who do not tolerate dairy. You can substitute coconut cream for the heavy cream in the green bean casserole and full fat coconut milk for the whole milk in the pumpkin pie custards. You can use ghee, olive oil, or avocado oil in place of butter.
  • Is it low calore? - It is about 800 calories less than the original recipes, but the full meal is still a lot of calories for one meal (about 1800 calories using the suggested serving sizes). Since it is Thanksgiving day (one day of the year) I personally do not worry about getting more calories than I need. I can eat light the rest of the weekend and enjoy every bite on Thanksgiving Day. If you are concerned with calories, you can see the calorie information and serving size for every bit of the meal and choose the lower calorie dishes to provide the bulk of your dinner.
  • Is it Primal/Plaeo/Ancestral? - It is Primal/Paleo/Ancestral if you include dairy in your definition. Some people do, some do not. For people who tolerate dairy it is a great source of protein and healthy fats, especially for vegetarians.
  • Why do you use sugar instead of sugar-free sweeteners? - I do not like the taste of sugar-free sweeteners. You can save about 36 grams of carbs by replacing the white sugar in the apple crumble and pumpkin pie custards with erythritol.
