Gluten-free Turkey Gravy

Gluten-free turkey gravy is pretty easy to make, using 2 Tablespoons of cornstarch in place of 1/4 cup flour in any recipe. But many people with gluten issues cross-react with cornstarch.

So I played with xanthan gum until I figured out the amount to make a nice smooth gravy. Xanthan gum is really easy to use, as long as you keep beating the gravy briskly until it thickens. Otherwise your xanthan gum will clump and not make a nice smooth gravy.
