Broccoli Beef
Broccoli Beef reimagined to be gluten free and SCD compliant. Note this recipe does include Tamari, which is a kind of soy sauce. It is gluten free, but contains soy. Not everyone following SCD can tolerate Tamari.
Ingredients
- 1 pound beef, sliced thin (no more than 1/4 inch) and cut into bite sized pieces
- 3 Tablespoons Tamari
- 2 teaspoons chopped garlic
- 1 teaspoon powdered ginger
- 2 Tablespoons olive oil, divided
- 1 1/2 pounds broccoli cut into bite sized pieces
- 1/2 cup hot water
Sauce
- 2 Tablespoons low sodium chicken broth
- 1 Tablespoon dry sherry
- 2 teaspoons honey
- 1 teaspoon toasted sesame oil
Instructions
- Put the beef in a small bowl and add the tamari. Set aside to marinate for at least 10 minutes.
- Mix the garlic and ginger in a small bowl and set aside.
- Whisk together the sauce ingredients in a small bowl and set aside.
- Heat a wok or large skillet on high until it just starts to smoke. Add 1 tablespoon olive oil, then add the broccoli. Stir fry the broccoli until it is bright green. Add the hot water, cover, and reduce the heat to medium. Let simmer for about 5 minutes, until the water is mostly cooked off and the broccoli is tender. Remove the broccoli to a paper towel lined bowl.
- Turn the heat back up to high and add the remaining tablespoon of olive oil.
- Add about 1/2 the beef to make one layer. Cook for about one minute, then flip and cook for one minute more. Remove the beef to a dish. Add the rest of the beef and cook the same way.
- Add the garlic and ginger mix to the skillet and stir for about one minute, until fragrant. Add the broccoli, beef, and sauce to the pan. Cook until the sauce comes to a simmer.
Notes
To make this gluten-free and SCD compliant, I do not thicken the sauce. It tastes fine, but is thinner than you might expect.
Note that not everyone following SCD can use Tamari. Even though it is wheat free, it is a soy sauce and may cause issues for some.
Serve over riced cauliflower.
